Gerbera Daisies Red Velvet Cake



This was yet another request for just a small red velvet birthday cake with cream cheese icing.



From her husband I knew that the birthday girl’s favorite flowers are gerbera daisies. To capture a little bit of the fading summer feeling I made them from gumpaste in vibrant yellow, hot pink, and juicy orange.



Both, the cake and the cake board are trimmed with thin hot pink ribbon which makes it look a little like a flower hat.



To accent the flowers each of them are dusted with matching fairy dust.

Strawberry Rhubarb Pie with pie crust recipe



I am definitely more of a cake than pie baker. Coming from Germany I only got to know the concept of pie in the last 4 years. But I had my share of attempts with store-bought pie shells and home-made ones; and with uncooked fruit fillings, home-cooked ones, and canned fillings.

While I learned to appreciate the taste of a home-made crust over a bought one, although it is a little more work, but canned fillings are definitely my favorite.

I just can’t seem to get the right filling consistency when making them myself, mainly resulting in oozing fruit liquids or fillings that run out of the shell ones cut.

So here is my latest pie attempt. A home-made crust with canned strawberry rhubarb filling.


This one is not yet baked. I usually prefer double-crusted pies, so for this one I multiplied the recipe by 1.5

Recipe for 9″ double-crust pie shell:
3/4 cup vegetable shortening (for more natural flavor I replaced half with butter)
2-1/4 cups all-purpose flour
3/4 teaspoon salt
3/4 cup cold water (I put ice cubes in the water glass)

1. Place shortening (and butter), flour, and salt in a mixing bowl. With a fork, or pastry blender if you have, work together the ingredients to a crumbly mixture. One tablespoon at a time use only as much water as needed to keep together. Cover and place in fridge for at least half an hour.

2. Roll out 2/3 of the dough about 1/2 inch larger than the rim of the pan. Place the filling into the shell.

3.Roll out last third into a 9″ circle (diameter of the pan). Cut out a hole in the middle, this will allow steam from the filling to escape during the baking process. Place onto the filling, fold over excess from the first crust and seal with a fork.

4. Since the filling is already cooked, the pie only has to bake until the filling is heated and the crust is golden brown. This can be achieved at higher heat (400F) for about half an hour. It will depend on your filling, so keep an eye on your crust.



5. Enjoy (preferably warm) with a scoop of ice-cream or whipped topping!



Wrestling Ring Cake with Wrestler Figurines




Summer is a very busy time for cake making and not always do I find the time to post pictures of the cakes of the week. But now starts the time where I get the chance to start catching up.

Lindsay ordered this very unusual birthday cake was created for her boyfriend who is a great wrestling enthusiast.



She was very helpful in the designing process with sending me pictures of specific elements on the cake like a wrestling ring, the WWE logo, and of Bret Hart the Hitman, the birthday boy’s favorite wrestler.



The wrestler figurines on top of the cake are created from gumpaste after Bret Hart and the birthday boy.



They are both holding a belt created after a WWE championship belt that reads “Happy Birthday”.

It was a three-layered cake in the flavors of vanilla bean, marble, and hazelnut with vanilla bean buttercream filling.



Specialty Austrian Sachertorte



I received a special request for an Austrian Sachertorte. It was invented by Franz Sacher for Prince Metternich who requested a special dessert for important guests he was expecting (Wikipedia).

Sachertorte is a not overly sweet chocolate dessert cake, filled and glazed with apricot glaze, and then covered in glaze from bitter chocolate. Traditionally it is served with unsweetened whipped cream.



I decorated the glazed cake with a flower spray from ivory and chocolate fondant.

From the customer I received this feedback, which to me meant a lot to hear from Sachertorte experts:

Hello Regina
I meant to drop you a note the other day to let you know that your cake was a big success. My mother said it was the best Sacher she had ever had! It was wonderfully moist (I have had some very dry ones as has she) and so flavourful. Thank you so much for your contribution to a very successful party.



Specialty Ivory Fantasy Flower Wedding Cake



I was very happy and honoured to create this small wedding cake which was made after the design of my own wedding cake.



Instead of royal blue there is an ivory colored fantasy flower with crystal stamens on top of the cake. A matching ivory satin ribbon makes the elegant border, which is finished off with crystal pins as well.



It is a carrot cake with vanilla bean silk meringue buttercream. The cake was delivered to The Harvest Golf Club here in Kelowna



Specialty Garden Girl Birthday Cake



This bright and colorful birthday cake was inspired by the decorations supplies for the party of which the birthday girl’s mom sent me a picture.



The two tiers of cake are covered in the shades of green and pink from the decoration design.

On the bottom tier the birthday girl’s name is spelled out in big pink letters. All around there are white and hot pink flowers together with bees and ladybugs.



The fondant on the top tier is imprinted with a quilted pattern using a quilting tool and all around there are hot pink butterflies in a variety of sizes. Standing on the very top is a 3D green number three.

Both tiers are finished off with a piped grass border.
