I received a special request for an Austrian Sachertorte. It was invented by Franz Sacher for Prince Metternich who requested a special dessert for important guests he was expecting (Wikipedia).
Sachertorte is a not overly sweet chocolate dessert cake, filled and glazed with apricot glaze, and then covered in glaze from bitter chocolate. Traditionally it is served with unsweetened whipped cream.
I decorated the glazed cake with a flower spray from ivory and chocolate fondant.
From the customer I received this feedback, which to me meant a lot to hear from Sachertorte experts:

I meant to drop you a note the other day to let you know that your cake was a big success. My mother said it was the best Sacher she had ever had!
