We are in the summer heat of August but this does not keep me from creating a ski hill cake for a customer whose dad is turning 60. The “hill” are two tiers of marble cake stacked onto each other, filled with mocha buttercream and covered in fondant. The snow effect is made with royal icing and the trees are fondant.The top is crowned with a replication of the customer’s dad from fondant and gumpaste. He is on skis and dressed in blue and yellow with a cross on the back as he used to be a ski patroller.
